Instructions
Bake the potatoes in the skin until cooked all the way through, pass through a drum sieve. Add the egg, then add the flour until a workable dough is reached do not add too much flour. Season and knead together. Roll into half inch cylinder, cut into half inch lengths and shape with a fork. Cook in boiling salted water until they float. Remove immediately
Where ever possible, cook potatoes with their skins to preserve the minerals and vitamin C which lay under the skin. You could peel after boiling…
